Low Carb Zucchini Fritters

Number of Servings: 2

Ingredients

    1 Medium Zucchini grated (approx 1 cup grated)
    2 Tablespoons grated onion (about 1/8 of a large onion)
    1 Tablespoon grated Parmesan Regiano
    3 Tablespoons flax meal
    1 Medium Egg
    1 teaspoon salt
    1 teaspoon dried italian herbs
    1/2 teaspoon garlic powder
    black pepper to taste
    butter/canola oil for frying - about 2-3 tablespoons

Tips

Serve with a dollop of sour cream or my recipe for 'Low Carb Avocado Ranch Dip' (counting carbs for dip)


Directions

Grate zucchini and onion and sprinkle with salt- line colander with paper towels. Let sit 20 -30 mins. Squeeze out as much water as you can.
Add remaining ingredients and allow to sit for 5 - 10 mins more to 'tighten up'
Using rounded tablespoons (serving tablespoons)
place 4 equal sized fritters in hot frying pan with butter/canola oil.
Fry til nice and brown and 'set' in the middle about 3-4 mins per side.
