Crispy Oatmeal Cookies

Introduction

Number of Servings: 88

Ingredients

    1 stick butter, softened (1/2c)
    1/2 c canola oil
    1c brown sugar
    1/2c white sugar
    1 egg
    2 tsp vanilla
    1/2 tsp cinnamon (more or less)
    1 tsp baking soda
    1 1/2 c whole wheat flour
    1/2 c AP flour
    2c old fashioned oatmeal
    1 c banana chips, broken into smaller pieces
    1c cranberry raisins

Tips

1) Cookie Scoop = awesome. Mine makes small cookies, but it means I have more control over how much I eat.

2) Whole Wheat Flour creates a browner cookie. Do a few at first to test your baking time.

3) King Arthur Flour makes a soft whole wheat flour that can be subbed 1:1 for white flour in most recipes. Its widely available - I got mine at Target. If you are using traditional whole wheat, you may want to go 1c white flour & 1c ww flour in this recipe.


Directions

Beat butter, oil, sugars & egg together until thoroughly combined and color lightens. Add vanilla, cinnamon, baking soda and flours to make dough. Stir in oatmeal, banana chips and cranberries.

Preheat oven to 375. Scoop onto silpat or parchment. Squash gently with your hands for a crisper cookie. Bake 10 min (if using the small scoop mentioned above. Larger cookies will need more time). Cool on racks.

Serving Size: Makes 88 cookies using a 1" diameter cookie scoop
