Brelynndee's Morning Glory Muffins

Number of Servings: 12

Ingredients

    2 cups flour (half and half whole wheat and all purpose)
    1 cup white sugar
    2 tsp baking soda
    2 tsp cinnamon
    1/2 tsp salt
    2 cups grated carrot
    1/2 cup raisins
    1/2 cup toasted nuts
    1/2 cup toasted shredded coconut
    1 apple, cored and grated
    3 eggs
    2/3 cup applesauce,unsweetened
    1/3 cup vegetable oil



Directions

Into large bowl, mix first 5 ingredients. Then add next 5. In a separate bowl, mix together the eggs, applesauce and vanilla. Pour over dry ingredients and mix just until moistened. Scoop into muffin cups that are lined with paper liners. Bake in 350F oven for about 20 minutes.
