Gorganzola Stuffed Dates with Smoked Almonds

Introduction

Good to bring to a party, no matter what kind, from a picnic to a wine tasting. Good to bring to a party, no matter what kind, from a picnic to a wine tasting.
Number of Servings: 18

Ingredients

    36 Large Dates
    8 ounces cream cheese (thawed at room temp. for 15 minutes)
    1 package Gorganzola Cheese (about 4 ounces)
    2 Tablespoons finely chopped shallots
    4 Tablespoons finely chopped parsley
    36 whole smoked almonds

Tips

Lower the calorie count by using low fat cream cheese.


Directions

Pit the dates by running a sharp paring knife across the top of the date, squeezing and removing the pit.

Cream the cheeses together until smooth.
Add the chopped shallots and parsley and mix well.

Spoon the cheese mixture into the dates.
Top each date with one smoked almond pressed into the top of the cheese mixture.

Arrange on a serving plate.

Serving Size: Makes 18 servings--2 dates per serving
