4 cups Cooked Pork Shoulder
1 chopped onion
1 cup salsa
8 oz light cream cheese
shredded mexican cheese
Add salsa and cream cheese. Cook until cheese melts.
Spoon into tortillas. Place in baking dish.
Cover with enchilada sauce.
Sprinkle with shredded cheese.
Bake on 350 for 20 min or until hot and cheese is melted.
Serving Size: Makes 8 enchiladas
