Great-Grandmother's Cherry Cake

Introduction

This is a lighter version of a recipe my mother figured out from just a list of ingredients with no amounts or instructions. My grandmother (and apparently her mother) made it from memory, and I recently learned that it's a traditional cake from the region of Germany that my ancestors probably came from. Number of Servings: 9

Ingredients

    1 cup Splenda
    1 cup light sour cream
    2 eggs
    1/2 tsp almond extract

    2 cups flour (divided)
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1 tsp cinnamon

    1 to 2 cups sour red cherries, fresh and pitted or canned and drained

Tips

The nutrition information includes the calories and carbs for the Splenda. In large amounts it has a significant number!


Directions

Beat together the Splenda, sour cream, eggs, and extract.

Put a few tablespoons of the flour in a small bowl and toss the cherries with it to coat them (so they won't sink to the bottom of the cake).

Mix the dry ingredients in a separate bowl, and beat into the wet ingredients. Fold in the cherries (and any extra flour from the bottom of the bowl.)

Bake in a greased 9x9x2 pan at 350 degrees until a toothpick inserted in the center comes out clean (about 25-35 minutes.)
