Andrea's Sour Cream Mashed Potatoes

Introduction

A great side dish! Also perfect for making a day ahead! A great side dish! Also perfect for making a day ahead!
Number of Servings: 6

Ingredients

    5 easy ingredients... you probably already have these around your house!
    Sour Cream, reduced fat, 1/2 cup
    Milk, nonfat, 1 cup
    Fresh Chives (or dried), 1.5 tsp chopped Mashed Potatoes, 4 cups
    Philadelphia Light cream cheese, 4 tbsp

Directions

Remove skin (if desired) and dice potatoes. Place in a large pot and cover with water. Bring to a boil, simmer until potatoes are tender, about 15-20 minutes. Drain.
Return to pot and add cream cheese, sour cream, and chives. Mash together until well mixed, then slowly add the milk until desired consistency is achieved.
Add salt, pepper, garlic power, and/or paprika to taste (not included in nutritional info).

To make for the following day, simply follow the steps above and then allow to cool. Refrigerate.
To bake, place in a greased baking dish and bake at 350 degrees for about 30 minutes. You may also dot with butter and/or sprinkle with cheese (not in nutritional info.)

  • These were so yummy! I definitely did not add a whole cup of milk though. I probably only used 2-3 Tbsp to get the right consistency. - 2/8/09

  • I would make this again but add less milk. I know the recipe states to add milk until it is the consistency you desire. I only added about 1/2 cup and it was to much. But it was good. - 2/3/08
