Ingredients

    1 TAB OLIVE OIL
    3/4 CHOPPED ONION
    1/2 CUP CHOPPED CELERY
    1CLOVE GARLIC MINCED
    2/3 CUP FAT FREE REDUCED SODIUM CHICKEN BROTH OR WATER
    1/2 CUP OF UNCOOKED TABOULI
    1/2 CUP CHOLESTEROL FREE EGG SUB
    1 TAB REDUCED SOD SOY SAUCE
    1/4 TSP GROUND CUMIN
    1/4 TSP PAPRIKA
    1/4 TSP BLACK PEPPER
    8 TAB CHILI SAUCE, DIVIDED
    1 POUND 93% LEAN GROUND TURKEY

Directions

1. HEAT OIL IN MED SKILLET OVER LOW. ADD ONION, CELERY AND GARLIC. COOK AND STIR 3 MIN. ADD BROTH AND TABOULI. BRING TO A BOIL. REDUCE HEAT TO LOW. COVER AND SIMMER 10 TO 15 MIN OR UNTIL BULGUR IS TENDER AND ALL LIQUID IS ABSORBED. TRANSFER TO LARGE BOWEL. COOL TO LUKEWARM.
2.PREHEAT OVEN TO 375 F. STIR EGG SUB SOY SAUCE, CUMIN, PAPRIKA AND PEPPER INTO BULGUR. ADD 6 TAB CHILI SAUCE AND GROUND TURKEY. STIR WELL UNTIL BLENDED.
3. PAT TURKEY MIX INTO GREASED OR SPRAYED 8 1/2X4 1/2 INCH LOAF PAN. TOP WITH REMAINING 2 TAB OF CHILI SAUCE
4. BAKE MEAT LOAF ABOUT 45 MIN. OR UNTIL BROWNED AND JUICES RUN CLEAR. LET STAND 10 MIN. REMOVE FROM PAN CUT INTO 10 SLICES. MAKES 5 SERVINGS 2 SLICES EACH.
