Introduction

A yummy, nutritious and filling salad (envied by my co-workers!)
NOTE : THIS RECIPE IS CHANGED TO USE A SMALL APPLE - NOT A LARGE ONE TO SAVE CALORIES! (Also I lessened the amount of celery and changed the amounts of some of the spices)

Number of Servings: 1

Ingredients

    3 oz cooked chicken breast
    1 cup chopped celery
    1 small apple
    1 wedge lemon
    (small amount of minced red onion and minced fresh parsley - optional)
    2T cider vinegar
    1/2 teaspoon Truvia
    1/4 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1/4 teaspoon cardamom
    salt and pepper

Directions

Chop apple, celery and cooked chicken into small pieces. Mix cider vinegar, stevia and spices, and lemon juice, pour over mixed vegetable and chicken. Chill.

(I pre-cook a pound of chicken at a time, portion it and store in freezer or fridge so it is handy)
