Rolled Greens with Sausage and Beans

Ingredients

    Greens (used collard, kale, chard and spinach)
    bacon
    onion
    sausage
    beans

Directions

Heat oil in dutch oven, saute bacon, add and then remove sausage, cook onions until soft, add collards in 4 batches, cooking 1 minute after each batch. Cook for 20 minutes, add sausage and beans and cook for additional 5 minutes

Serving Size: Makes 8 1.5 cup servings
