Macguyver Chicken

Introduction

I threw this together one night when feeling lazy & uninspired. The kids LOVED it and ate it up like crazy. Even the husband loved it. The flavors are more Italian than anything else. I threw this together one night when feeling lazy & uninspired. The kids LOVED it and ate it up like crazy. Even the husband loved it. The flavors are more Italian than anything else.

Ingredients

    4 chicken breasts, cut into bite sized pieces
    1/2 onion, diced
    3 cloves garlic
    2 T Olive Oil
    1/2 tsp Italian seasoning
    1/4 c white wine
    1 tsp garlic salt
    1/2 c chicken broth
    1 14-oz can diced tomatoes
    2 T tomato paste
    1/2 c parmesan cheese
    8 oz dried pasta like rotini, cooked & drained
    2 T fresh basil, cut into thin ribbons (chiffonade)

Directions

In deep skillet, heat olive oil over medium high heat. Saute onion until golden. Add garlic & saute 30 seconds or until fragrant.

Add chicken breasts and cook until just white on the outside. Stir in Italian seasoning & white wine. Cook 5 min until alcohol has evaporated.

Add garlic salt and tomato paste. Stir in diced tomatoes and chicken broth, making sure that the tomato paste has been completely incorporated. Simmer 10 minutes or until sauce has thickened a little.

Stir in parmesan cheese until incorporated then add the cooked pasta. Just before serving, stir in the basil.
