Sunny's Cheesy Spinach and Rice Casserole

Introduction

This is my take on comfort food. This is my take on comfort food.
Number of Servings: 8

Ingredients

    2 C white cooked rice
    1/2 small onion chopped
    2 cloves garlic crushed and chopped
    1 sun dried tomato
    2 c fresh spinach or 1/2 pkg frozen
    1/2 tbsp basil
    1/8 tsp oregano
    salt dash
    black pepper dash
    1 oz white wine
    1 tsp olive oil
    1 lg egg
    4 oz cheddar jack or colby jack cheese
    2 oz mozzarella shredded
    1/2 tbsp parmesan

Tips

This dish is easy convenient and very filling, it has a comfort food feel without the excess calories and fat.
You can add cooked bulk or sliced italian sausage prior to baking for a one pot meal.


Directions

put oil in pan and saute onions till soft and transparent add pepper, tomato, basil, oregano stir and add spinach turn a few times, add wine salt and pepper mix well and set aside. Beat one egg with 1 tbsp of water and add the cheddar jack and half the mozzarella. In a big bowl put rice add the egg and cheese mixture and the cooked spinach mixture mix well and put in sprayed casserole dish, pat down add remaining mozzarella and Parmesan and bake at 350 for 20 to 30 minutes until bubbly.
