2 tsp. Olive oil, divided
1 cup southwest style hash browns (Simply Potatoes)
3 large eggs
1/8 cup milk
1 plum tomato
salt & pepper to taste
Meanwhile dice tomato and scramble eggs with milk and salt and pepper.
Remove potatoes from pan.
Heat remaining 1 tsp olive oil in pan. Add eggs. Cook until mostly done, scraping bottom of pan frequently (but not stirring).
Add potatoes and tomatoes, pushing down into eggs slightly.
Flip fritatta in pan, or finish cooking under broiler.
Serving Size: Makes 2 hearty portions, or 4 sides (nutritional info is for 2 servings)
