Janie's Tomato soup

Introduction

I just used what I had. I just used what I had.
Number of Servings: 8

Ingredients

    1 cup chopped onion
    1 cup mushrooms chopped into small pieces
    1/2 cup chopped green pepper
    1 chopped jalapeno pepper
    1 cup chopped carrots
    1/2 cup chopped celery
    1 tbsp olive oil
    2 (14.5oz) cans diced tomatoes, no salt
    1 cup chicken stock ( I make my own)
    2 cups water
    1 tbsp cumin
    1 tbsp chili powder
    2 tsp black pepper
    1 tsp salt

Tips

I chopped all my veggies in my mini food processor which saved time. Also chopping the mushroom very small acted almost like a thickening agent to the soup. Season to your own tastes. This is just what I have in my fridge you can change it to what you have.


Directions

heat oil in stock pot, saute onions and mushrooms until soft, add in other veggies and saute for a little while. Add in tomatoes, stock, water and seasoning. Bring to a boil and then reduce heat and simmer for 60 min.
