IntroductionI just used what I had. I just used what I had.
1 cup chopped onion
1 cup mushrooms chopped into small pieces
1/2 cup chopped green pepper
1 chopped jalapeno pepper
1 cup chopped carrots
1/2 cup chopped celery
1 tbsp olive oil
2 (14.5oz) cans diced tomatoes, no salt
1 cup chicken stock ( I make my own)
2 cups water
1 tbsp cumin
1 tbsp chili powder
2 tsp black pepper
1 tsp salt
I chopped all my veggies in my mini food processor which saved time. Also chopping the mushroom very small acted almost like a thickening agent to the soup. Season to your own tastes. This is just what I have in my fridge you can change it to what you have.
