Vegitarian Enchilada

Ingredients

1 cup brown rice (instant)
1 small can black beans
1 small can corn
1 can enchilada sauce
Kraft lowfat mexican cheese
Reduced fat sour cream
Whole Wheat Tortillas
Directions
Follow instructions to cook rice, whether on the stove or in the microwave. I usually do 1 cup of water to each cup of rice and microwave for 5 minutes.
Heat black beans and corn separately on the stove. This should only take a few minutes.
After these three ingredients are cooked, combine in a mixing bowl (I use a large one since the 1:1:1 of rice, beans, and corn usually makes a lot) mix in enchilada sauce to taste.
Warm up tortilla and then add the rice, bean, and corn mixure. Top with cheese and sour cream.
