Italian Ham and Cheese Fritatta

Introduction

Ingredients

    6 whole eggs
    3/4 cup lowfat buttermilk
    2 Tablespoons grated Parmesan or Romano cheese
    2 Tablespoons unsalted butter (divided into 2)
    1/4 red onion quarter slices or diced
    2 ounces thick sliced ham, diced
    4 ounces fresh mozarella, diced
    1 cup fresh spinach leaves, packed
    1/4 teaspoon dried basil (or 1 teaspoon fresh)
    1/4 teaspoon dried oregano (or 1 teaspoon fresh)

Tips

A two pan non-stick fritatta set is super but I have cooked the entire recipe in a single skillet, placed it in the oven for 10 minutes and was able to slide out a beautiful omelet/fritatta.


Directions

Using a double panned frittata set (or a 10 inch nonstick skillet, melt 1 tablespoon butter into hot pan. Add onion and sautee until softened. Add ham and spinach leaves and continue to sautee for 5 minutes. Meanwhile, mix together eggs, buttermilk, salt, herbs, and cheeses in a mediium bowl with a whisk. Add egg mixture to contents of pan. Using a rubber spatula, lift cooked egg to allow uncooked egg to reach the bottom of the pan. Continue until no uncoooked egg moves. Place top pan as directed then flip fritatta over. Cook on low heat for an additional 5 minutes. Flip again, remove top pan, and slide fritatta onto serving plate. Serves 6. If using a skillet only, cook egg mixture until nearly dry then place in a 400 degree oven for 5 to 10 minutes until the top is completely dry. Slide onto plate for cutting and serving.
