Easy Couscous Salad

Introduction

This easy no cook recipe is ideal as a side dish to serve with fish or as a salad on its own. Ideal to take to work as lunch. You can omit the cheese to reduce calories and fat and it will still taste good! This easy no cook recipe is ideal as a side dish to serve with fish or as a salad on its own. Number of Servings: 6

Ingredients

    1 cup dry couscous
    fresh lemon juice from 1 lemon
    1 cup water (room temperature)
    3 fresh large tomatoes (chopped)
    1 green pepper (chopped)
    1cucumber (sliced)
    6 green olives (chopped)
    1 tbsp olive oil
    1 tbsp chopped fresh mint
    1/2 tsp fresh ground pepper
    100 gr feta cheese or 1 Maltese Pepper Cheeslet (Gbejna) cut in small cubes

Tips

Don't worry that the water is not hot, believe me the couscous will still get to the right consistency to eat. The lemon juice, water and tomatoes will do the trick.


Directions

Mix the couscous with the lemon juice and water. Add all other ingredients and mix well. Leave to rest in the fridge for a an hour. Mix again before serving. Will keep in the fridge for a day.
