Moist Pumpkin Cake



Introduction

This is a great moist snack cake!! This is a great moist snack cake!!
Number of Servings: 12

Ingredients

    1 can (15 oz.) pumpkin
    1 pkg dry cake mix (spice cake or chocolate is the best)
    1 cup water

Directions

Pour dry cake mix into bowl, add water and pumpkin, mix thoroughly.
Spray cake pan with cooking spray.
Pour mix into cake pan.
Bake at 350 for at least 40 minutes.
Let cool and cut into 12 servings.

    Great idea! Needs a little more cinnamon and nutmeg though. NOTE: If you don't use mixes, substitute pumpkin for the eggs and fat (oil, butter, etc) in your scratch recipe; I do this all the time. I also like to add 1/2 c. chopped walnuts--adds a little fat, but it's the GOOD fat. - 6/12/11

    This was an old favorite of mine... minus the water and baked as muffins, however, I stopped using it when I discovered (via SparkPeople) that cake mix contains trans fats. - 6/12/11

    I made this with carrot cake mix,15oz.can of pumpkin,1/2 cup pecans,1/2 cup water.baked in 9x13pan. served it with a dollop of fat free whipped topping. Very good, I'll make this again.

    I try to make cakes from scratch, I can control ingredients much better and also my husband has a milk allergy so I need to keep careful. I find too many 'off' ingredients in processed cake mixes. - 6/12/11

    This was awesome! I've already made it twice. I do add pumpkin pie spices. This last time I made it in a loaf pan, and its wonderful with a little bit of a crust! - 10/25/08

    I added 1 tsp of Pumpkin Pie Spice to this recipe and then baked them in a mini muffin pan and got 24 muffins for 30 minutes for bite size snacks that I popped into the freezer. GREAT RECIPE !!! - 11/25/11

    This is the best!! Couldn't be easier to make! I tried this with a Betty Crocker Spice Cake mix and it was delicious! My husband and I both loved it! And really loved that there is no added eggs, oil or butter. Will make this many more times! - 9/21/11

    My mother used to make this very thing for our lunches when I was a kid. I used it for my kids school lunches as well. We use spice cake mix and add a cup of raisins. It's delicious! One time we tried a gingerbread cake mix, not as moist but my son said it was better for handling, not as sticky. - 6/14/11

    This is one of my favorite recipes. Sometimes I use fresh winter squash instead of the canned pumkin. My grandsons like this made into cupcakes. :) - 6/12/11

  • You can easily make this cake if you forego the cake mix and make your own from scratch. It won't have any trans fats in it that way because you know what is in it. - 11/25/11

  • I love pumpkin and thought I would really like this because it was so simple. I did not really enjoy it. The pumpkin flavor was strong and not in a good way. I used chocolate cake mix. Maybe spice cake is better choice. - 11/24/11
