E's Shortbread Squares

Ingredients

1 cup (2 sticks) unsalted butter, room temperature
3/4 cup confectioners' sugar
1 1/2 teaspoons coarse salt
2 1/3 cups all-purpose flour (spooned and leveled)
Tips
Directions
Pulse salt in food processor. Combine with sugar and butter in food processor.
Add flour and pulse until just combined.
Press into square cake pan lined with foil. (Cover dough with plastic wrap and then press second cake pan on top to flatten dough out evenly.)
Prick dough with a fork.
Bake approximately 15 minutes at 350 degrees or until edges are just beginning to brown. Rotate frequently throughout baking. (A 90 degree turn every 4 or 5 minutes is good.)
Cut into 64 squares while still warm. Leave in pan to cool completely. Remove from pan by lifting foil.
Dust with powdered sugar, if desired. (Not included in nutritional info.)
