Introduction

This is based on my favorite side dish at my local Indian restaurant. Yum! This is based on my favorite side dish at my local Indian restaurant. Yum!
Number of Servings: 4

Ingredients

    1 C Chickpeas
    1/2 C Diced Potato
    1/4 C Diced Tomato
    1/4 C Diced Bell Pepper
    1/4 C Diced Onion

    Sauce:
    3 oz. Non-Fat Greek Yogurt
    1 T Olive Oil
    4 T Cilantro
    1 T Paprika
    1 T Tamarind Sauce

Tips

Works great as a leftover since it "cooks" in the fridge anyway.


Directions

Diced the vegetables and mix. Combine all sauce ingredients and add to veggie mix. Chill for half hour. Serve cold.
