Pizza Chicken

Introduction

Number of Servings: 1

Ingredients

    6 ounces raw chicken breast, pounded thin
    17 slices Hormel Turkey Pepperoni
    5 mushrooms sliced medium thickness
    1/2 cup red onion, sliced thin
    1/4 cup green peppers, sliced thin
    1/2 cup Kraft Free Mozzarella
    2 T Parmesan Cheese
    1/2c Chef Boy R Dee Pizza Sauce
    1/2t oil

Tips

Serve on top of a serving of pasta if desired.


Directions

Heat a skillet on medium heat until hot. Add oil and swirl around in pan. Pound chicken breasts very thin. Add to skillet and let sear for about 5 minutes, then flip. Add mushrooms, onions and pepperoni. Keep pepperoni separate from vegetables. Cover with lid. Continue cooking for about 5 minutes or longer until chicken is brown and mushrooms and onions begin to caramelize. Also make sure pepperoni is crisping up on edges. Remove vegetables and pepperoni. Pour pizza sauce on top of chicken. Add 3/4 of cheese then top with veggies. Add remaining cheese then top with pepperoni. Cover skillet with lid for 3 - 4 minutes until cheese begins to melt and run down edges of chicken slightly browning in pan. Remove from skillet and allow to rest for a few minutes then serve.
