Kidney Bean Pasta (UK measures)

Introduction

This is an easy to make dish that is filling and loaded with protein and fibre. This is an easy to make dish that is filling and loaded with protein and fibre.

Ingredients

    3.5 oz wholewheat penne pasta
    400g can red kidney beans
    400g can chopped tomatoes
    1 tbsp ground turmeric
    1 tsp freshly milled pepper
    1 tsp cayenne pepper

Directions

Cook the pasta according to the instructions on the packet. (I do not add salt)
Drain and add back into the pan.
Add the canned tomatoes, drained kidney beans and seasonings.
Allow this to reduce over a low heat to the desired consistency.

    A full teaspoon of ground pepper and one of cayenne is extremely spicy. We like spicy but this about burned out our innards. lol I will 1/2 each next time I make this recipe. - 2/8/12

  • Makes 2 very generous servings. My husband the carnivore even liked it. I used less than half the recommend spice amounts and added some spaghetti sauce for more flavor and sauciness.
    I made this a 2ndx with original spice prescription and it burned my mouth. too hot for this kid. - 7/25/12

  • Sounds about like one I make (but I'll have to try it with tumeric). I use beans with chili seasoning, angel hair and add shredded cheese and onion to the top. - 2/5/12

  • Yummy! I didn't have the kidney beans so I had to substitute black beans whoch are our favorite here anyway. This has made life so easy, with my disability I am always looking for a easy delish dinner that dh & son like and this is one to add to my file. We like spicy too! Thanks! - 2/5/12

  • I like this recipe because it is so easy and healthy :)
    I swapped the tumeric and cayenne, for cumin and chilli as that was all I had in the house, but it was good. I also added some balsalmic vinegar and grated cheese to serve. - 8/10/09

    Very Spicy. Much too hot and spicy for my tastes. The basic recipe appeals to me but the spices need to be toned down as it seemed over seasoned to me. - 3/26/07
