Introduction

This rice dish makes a flavorful side to any meal! You can make it as pungent or mild as you wish with the garlic and basil. It tastes wonderful served hot or cold! This rice dish makes a flavorful side to any meal! You can make it as pungent or mild as you wish with the garlic and basil. It tastes wonderful served hot or cold!
Number of Servings: 1

Ingredients

    1/2 cup white rice (dry)
    1 oz. reduced fat crumbled feta cheese
    1/3 cup red onion (chopped)
    2 tsp. minced garlic
    2 tbs. fresh garlic (chopped)

Directions

Start cooking rice first using 1 1/4 cups water to the 1/2 cup of dry rice.

Saute onion, minced garlic & basil until onions are clear. Set aside in medium-sized bowl.

When rice is finished cooking, combine rice with the onion mixture and add feta.

Serve warm or refrigerate to serve chilled later.
