Introduction

Ingredients

    1 Tbs unsalted butter
    1 onion, finely chopped
    2 cloves garlic, minced
    1 tsp fresh ginger root, finely chopped
    1 (14.5 oz) can diced tomatoes, with juice
    1 Tbs lemon juice
    1 lb boneless skinless chicken thighs, quartered or cut into chunks
    pinch of sugar if desired.

    SPICES:

    1 1/2 Tbs Paprika

    1 tsp Ground Cardamom
    1 tsp Kosher Salt

    1/2 tsp Ground Coriander
    1/2 tsp Ground Cumin
    1/2 tsp Ground Nutmeg

    1/4 tsp Black Pepper
    1/4 tsp Cayenne (use up to 1 Tbs according to taste)
    1/4 tsp Ground Clove
    1/4 tsp Fenugreek seed
    1/4 tsp red pepper flakes (use up to 3 Tbs according to taste)
    1/4 tspTurmeric

    1/8 tsp Allspice
    1/8 tsp Cinnamon
    1/8 tsp Garlic Powder
    1/8 tsp Ground Ginger

    *Optional: 4 hard boiled eggs, peeled.

Tips

If you don't have all the spices, don't let that deter you! Add what you have to the mix and give it a shot.


Directions

In a large skillet or dutch oven, melt butter.
Saute onion until soft.
Add garlic, ginger, salt and spices, stirring until fragrant, 30 - 60 seconds.
Add tomatoes, lemon juice and sugar if desired. Bring to a boil.
Add chicken pieces and turn to coat. Cover and simmer for 30 minutes. Check thighs for doneness (dark meat should reach an internal temperature of 165 degrees). Continue to cook until chicken is done and the mixtures has thickened to a stew-like consistency. Serve with rice or flatbread.

*If using hardboiled eggs, lightly score the eggs with a sharp knife and allow to sit in the sauce with the chicken for the final 10 mins. An egg each adds appx 70 calories to each serving.
