Ingredients

    Egg beaters
    onions
    spinach
    mushrooms
    poblano pepper
    butter
    Mrs. Dash
    red pepper flakes

Tips

Have fun with it and substitute any ingredients to suit your taste. Stay away from juicy veggies. They can make it too watery to cook well.


Directions

chop all veggies into small pieces and lightly fry in 1tbs butter. Add the spices and pour in the eggs. Let the egg whiten when it looks half cooked and fold one side to the middle then fold the other side to the middle. Add the rest of the butter and let it fry a bit more then flip over and let it cook through. Careful not to overcook the egg.
