IntroductionTastes just a good as when sugar is used but less calories and great for diabetics and those watching carbs. Also great for those who have lactose intolerance. 2 3/4 cups 2% Lactaid or 2% no lactose milk
3 tbsp tapioca pearls (Minute Tapioca)
1 egg lightly beaten
1/3 cup Splenda or other preferred no-calorie sugar substitue
1 tsp vanilla
Cover bowl(s) with plastic wrap to prevent a skin from forming on the top if you don't like the skin.
You can cut up fruit and serve on top of tapioca or serve it plain. I like strawberries and blueberries on mine.
