Vege Tuna Salad

Introduction

Great make ahead tuna salad for sandwiches, stuffing in peppers or accompanied by cottage cheese or fruit. Great make ahead tuna salad for sandwiches, stuffing in peppers or accompanied by cottage cheese or fruit.

Ingredients

    1 12 oz. can Albacore Tuna in Water
    4 Tbls Lite Mayo
    1 medium red bell pepper - chopped
    3 stalks celery - chopped
    2 jalapeno peppers - diced
    3 dill pickles - chopped
    1 small cucumber - chopped
    Salt and Pepper to taste

Tips

Great on Dave's killer Whole Wheat lite bread for lunch or on crackers for a snack. Can be made ahead and used for the coming week.


Directions

Drain Tuna and cut veges - mix all ingredients and season to taste. Change out for other veges depending on what you like.
