Introduction

calls for ground veal and ground beef
i used chopped chicken breast and chopped 'skinny" pork.Had no pancetta at home ,added smoked paprika powder.

Number of Servings: 8

Ingredients

    8 oz chicken breast finely chopped
    8 oz pork loin finely chopped
    1 Tbsp olive oil
    2 med. onions finely chopped
    3 small carrots ,dinely chopped
    2 celery stalk finely chopped
    1 -2 garlic cloves finely chopped
    1 dash of salt , pepper, oregano,fine herbes.
    1tsp smoked paprika powder

Directions

Heat the oil in frying pan , add onion,carrotts,celery and garlic stirfry for 10 minutes add the meats saute'
for about 10 min.add the wine ,boil for 1 minute,
stir often.Add 2 cups of broth and tomato paste,reduce heat and simmer for 50 min or so.Can be done a day ahead.
When ready to eat, heat the sauce add 1/2and 1/2 or milk cover and heat.
Meanwhile, cook pasta accordingly , drain and reserve
1/2 cup of the water to add to sauce if needed. mix the sauce and cooke pasta and serve.
