Introduction

A good way to use abundant summer veggies or leftovers! A good way to use abundant summer veggies or leftovers!
Number of Servings: 4

Ingredients

    1 large baked potato, sliced
    2 medium zuchinni, sliced
    1 cup sliced red pepper
    1 cup sliced yellow onion
    1 cup sliced fresh tomatoes
    1 cup fresh corn, cut off the cob
    1 cup shredded low fat cheddar cheese

Directions

In a large non stick saute pan, saute onions over low heat in 1 Tbsp. olive oil. Add sliced red peppers and zuchinni, sauteing until just beginning to brown. Add sliced potato, corn, and tomatoes and simmer until heated through. Top with low fat cheddar cheese, and place a lid on the pan to help the cheese to melt.

Serving Size: Makes 4 servings as a main course
