2 cups summer squash
2 cups zucchini
1 tbs olive oil
1.5 cup shredded cheddar cheese
dried basil leaves
Sautee veggies and spices in olive oil until they loose their crispness then add egg and top with cheese. Cook on stove top until egg begins to cook through. Broil at 450 for 5 minutes.
Serving Size: Makes 4 servings. Divide accordingly.
