Potato Salad (Summer 2012)

Number of Servings: 5

Ingredients

    500 grams red potatoes, diced, boiled 4 minutes
    7 eggs (7 white, 3.5 yolks)
    136 grams celery, diced
    70 grams green onions, sliced finely
    100 grams Miracle Whip Light
    90 grams yellow mustard
    1/2 tsp salt
    1/4-1/2 tsp white pepper

Directions

1) Dice potatoes finely (1/4" cubes). Cover with water, bring to boil, boil only 4 minutes.

2) Hard boil eggs (10 min), removing half the yolks. Cut up medium (not too fine)

3) add remaining ingredients. Chill. Serve



Serving Size: Makes 5 9-oz (1 cup) servings
