Introduction

Just leftovers from my fridge that need to be used. Just leftovers from my fridge that need to be used.
Number of Servings: 4

Ingredients

    Garlic, .5 cup
    Scallions, raw, .75 cup, chopped
    Mushrooms, fresh, 4 medium
    Sweet peppers (bell), .75 cup, sliced
    Flax Seed, 2 tbsp
    Red Ripe Tomatoes, .5 tomato
    Carrots, raw, 1 large (7-1/4" to 8-1/2" long)
    Ground Cayanne Pepper, 0.5 tsp
    Pepper, black, 1 tbsp
    Olive Oil, 2 tbsp
    Feta Cheese, .25 cup, crumbled
    Lettuce, red leaf (salad), 4 cup shredded
    Beans, black, 1.5 cup
    Singles American Yellow cheese (1 slice)
    Salt, 2 dash
    Fenugreek seed ground, .33 tbsp
    Cilantro, dried, 2 tbsp
    Thomas’ Sahara 100% Whole Wheat Wrap, 2 serving
    Sweet Corn, Fresh, .5 cup
    Butter, unsalted, 0.25 tbsp

Tips

Left over mix/Burritos are even better the next day.
As with any recipe. Add what makes you happy. Add what taste good to you. Just make it with healthy ingredients and you will do fine.


Directions

Saute all ingredients except for Wraps, Lettuce and Cheeses

Season to taste.

Lay out wrap. Add equal amount per wrap of cheese. Add equal amounts of Saute mixtures. Wrap up and put in a 300 degree oven for 10 minutes.

Serve over a bed of lettuce with a Vinaigrette dressing.
