Mexican Style Quinoa Salad

Introduction

Simple quinoa salad with a light dressing. You can top with cheese (I sometime add light feta) salsa, or guacamole if you like. Simple quinoa salad with a light dressing. You can top with cheese (I sometime add light feta) salsa, or guacamole if you like.
Number of Servings: 8

Ingredients

    2 cups cooked, warm quinoa
    1/2 cup sliced green onions
    1 cup unsalted canned corn, drained
    1 tbsp EVOO
    2-3 tbsp chopped, fresh cilantro
    6 cherry tomatos, quartered
    Juice from 1 1/2 to 2 limes


Tips

Play around with the cooking times to your taste, it should take 7-10 mins to cook depending how soft you prefer it.
Add beans, salsa, cheese avocado, what ever you like, none of that is in the tracker information though.


Directions

Rinse 1 cup of quinoa in warm water for about 3 mins, then boil for 8 mins in 2 cups of water. Mix lime juice, olive oil and cilantro, toss with warm quinoa, add remaining ingredients and mix all together. Add beans, salsa, cheese avocado, what ever you like, none of that is in the tracker information though.

Serving Size: Makes about 8 half cup servings
