Buckwheat Pumpkin Pancakes

Introduction

This really amps up the fiber in pancakes. These are thick and dense, so very filling. They are not very sweet, so adjust sugar to your tastes. I use a pancake/waffle mix to save time. Number of Servings: 6

Ingredients

    1.5 cups buckwheat pancake mix
    1 tsp cinnamon
    1/4 tsp nutmeg
    1 egg
    1 tbsp brown sugar, packed (more to taste)
    1 tbsp oil
    3/4 cup canned pumpkin
    1.5 cup almond milk (or milk of choice), more or less as needed

Tips

I can make 6 at a time on my griddle and I keep them warm in the oven while I finish the batch.


Directions

Heat griddle or skillet.
In a large bowl stir together pancake mix and spices. Set aside.
In another bowl whisk egg and sugar together. Stir in oil, pumpkin, and most of the milk, until smooth.
Pour into dry ingredients and stir just until moist, adding more milk if needed.
Drop batter by 1/4 cupfuls onto hot skillet. Cook until edges are dry and bubbles form, then flip.
Serve hot.

Serving Size: makes 12 pancakes (1/4 cup batter each), 2 per serving
