Introduction

What could be better than asparagus and bella mushrooms smothered in cheese and sandwiched between a flour tortilla? Easy to make recipe with lots of eye appeal.
Number of Servings: 2

Ingredients

    (2) Mission 8 inch flour tortillas
    1/3 cup (28 oz) Great Value Finely Shredded Fiesta Blend Cheese
    9 Asparagus tips with stalk
    1/4 c. Fresh Baby Bella Mushrooms
    Couple dashes of Garlic Powder
    Pam Olive Oil Spray or other comparable brand

Tips

If serving with pico de gio or guacamole, prepare these sides a few hours ahead of time so it can chill when served.


Directions

1) Blanche asparagus in boiling water for about 20 seconds, drain, and rinse with cool water to stop the cooking process
2) Spray cast iron skillet with Pam and heat to medium-medium high.
3) Thinly slice bella mushrooms and cook in cast iron skillet till slightly tender. Remove.
4) Take first flour tortilla and cook both sides until lightly browned. Then remove from skillet.
5) Do the same with second tortilla, but only on one side. When first side is browned, flip and add cheese, asparagus, and bella mushrooms. Stack second tortilla on top.
6) When cheese melts, flip quesada and cook for approximately one minute on other side just to warm again.
7) Slice into quarters. Service with a side fresh pico de gio, and/or guacamole. Makes 2 servings. (204.8 calories).
