Watermelon Freeze

Introduction

Ingredients

    1 water
    1 sugar
    8c diced watermelon
    3 Tbsp Lime Juice

Tips

Watermelon has such a high water content that this is best eaten immediately. If you store it in the freezer it becomes neccesary to let it defrost a little before eating and is more like an Italian ice.


Directions

Combine water and sugar in sauce pan. Bring to a boil and stir until sugar is dissoveld. Let cool to room temperature. This is simple syrup.
Prepare watermelon by cutting up, removing seeds and puree in blender or food processor.
Mix the watermelon puree, simple syrup and lime juice, cool in fridge for at least an hour.
Pour into ice cream maker and chill for 25 minutes.
