Turkey and Squash Crazy Casserole

Introduction

For leftover turkey, especially that dark meat that no one at my house wants in a sandwich. For leftover turkey, especially that dark meat that no one at my house wants in a sandwich.
Number of Servings: 7

Ingredients

    1/2 c diced onion
    1/2 c diced sweet, red peppers
    2 1/2 cups diced summer squash
    1 tablespoon extra virgin olive oil
    Scant 2 cups of diced, dark turkey meat (no skin, 8 oz)
    6 oz (half pkg) of Ronzoni whole grain noodles
    1 can Campbell's cream of asparagus soup (10.75 oz)
    1/2 cup 1/2% milk
    Optional: top with a sprinkling of Mrs. Dash Onion & Herb. Garnish with red pepper strips, if desired.

Tips

No not skip saute step. Add water to saute pan, as needed. Asparagus also would be very good in this but I don't have any on-hand.


Directions

Saute onions in 1 T extra virgin olive oil. Add peppers and squash and cook until squash is tender. You probably will need to add some water. Cook noodles according to package directions (8 minutes). Mix everything together. Optionally: bake in oven. Or measure and microwave your portion.

Serving Size: 7 one cup servings
