Introduction

Ingredients

    1.5 lbs boneless, skinless chicken breasts
    1.25 cups BBQ sauce (I use Famous Dave's sauce)
    .75 cups water
    1.5 cups brown Minute Rice
    1 cup corn

Directions

1. Place chicken in pot and fill with water until chicken is covered. Cook chicken on medium-high heat for about 20 minutes or until chicken is cooked through, keeping an eye on the pot to ensure it doesn't boil over.

2. Remove chicken from water and cut into approx. 2" chunks.

3. Place chicken, BBQ sauce, and water in 4.25 qt. pan. Cover; cook over medium-low heat for 20 minutes or until tender.

4. Add rice and corn. Turn down heat and simmer 5 minutes or until rice is cooked.

Serving Size: Serves 4-6
