    1.5 cups Sweet corn; grilled then cut off the cob 1/4 cup Onion; diced
    1/2 cup Red Kidney Beans; canned, drained well
    1/4 cup Black Olive slices
    1 Lime, squeeze the juice and grate the rind
    1/2 tsp Garlic powder - or 3 fresh cloves minced
    1 Tbsp Parsley ( may opt to use cilantro instead)
    drops of favorite hot sauce as desired.


Made this recipe to use up leftover grilled corn. Stores well in refrigerator for up to 4 days.


Cut corn off the cob to measure 1.5 cups in a 4 cup bowl. Add the rest of the ingredients, and toss to mix well. Chill 30 minutes to mellow the flavors, serve cold.
