    1 extra large organic free-range egg (pasteurized if desired)
    1/3 cup 365 Organic Extra Virgin Olive Oil
    1/3 cup Organic Sesame Oil
    1/3 cup Walnut Oil
    1 Tbsp. Organic Lemon Juice
    1 tsp. Dry Mustard (to taste)
    1/2 tsp. paprika (to taste)


Home pasteurization of egg-in-shell does not pasteurize all of egg within shell, but cleans shell. This prevents most contamination.


Home pasteurize egg in shell, if desired.
Bring all ingredients to room temperature.
Measure oils together (1 cup total).
In deep narrow glass bowl, combine egg, spices, and lemon juice. Combine thoroughly with immersion blender.
Pour in 2 tbsp. or so of blended oils. Allow to sit 15-30 seconds for oil to rise to surface. Blend steadily with immersion blender until mixture emulsifies. Slowly add oil in steady stream, no more than 1 Tbsp. at a time, blending constantly to maintain emulsion.

Serving Size: Makes about 20 1-Tbsp. servings (about 1.25 cup)
