Low Sodium Cuban Black Bean Soup

Ingredients

    1 lb dried black beans
    2 tbls. olive oil
    1 large onion
    1 green pepper
    6 cloves garlic
    6 Cups low sodium chicken broth
    1/4 C C chopped fresh cilantro
    black pepper to taste
    Sour Cream (optional)
    Lime wedges (optional)

Tips

This soup can be make up 2 days in advance and refrigerated tightly covered. Reheat covered over low heat.


Directions

Soak beans in cold water to cover over night.

Heat oil in 3 quart sauce pan. Add onion, green pepper and garlic. Cook until onions are translucent. Reduce heat to low and stir in cumin and coriander. Cook, stirring constantly for 1 minute.

Add beans and broth and bring to boil over high heat. Reduce heat to low and simmer for 1 - 1 1/2 hours, or until beans are soft.

Remove 2 coups of beans with slitted spoon and puree . Return beans to soup, stir in cilantro, season to taste with pepper and serve hot. Top with a dollop of sour cream and serve with lime wedge.
