El Rancho Casserole

Introduction

Our family favorite: my sister Shannon learned to make this in 7th grade home-ec back in the early 70's! Our family favorite: my sister Shannon learned to make this in 7th grade home-ec back in the early 70's!
Number of Servings: 6

Ingredients

    1 lb lean ground beef
    1 bottle Heinz Chili Sauce
    1 c. shredded cheddar cheese
    10 oz. frozen yellow corn
    3 corn tortillas
    1/2 t. cumin powder
    1/2 t. chili powder

Tips

We bake it in the oven at the same time as Jiffy Corn Muffins--which we add 1 c. cheddar cheese to so the muffins are moist!


Directions

While browning the beef, place frozen corn into a saucepan with lid and 1/4. cup water add 1/2 of the seasonings to corn and the other half to the meat. Turn corn on high until steam escapes, then turn it to low.
After browning meat, drain and remove from heat. Add bottle of Heinz Chili Sauce, drained corn, and cheddar cheese. Layer in a casserole dish with the corn tortillas. Bake for 15 min. in 400 degree oven.

Serving Size: Makes about 6 1-cup servings
