Ingredients

8 large red peppers
2 tbs olive oil
1 large yellow onion chopped
4 cloves garlic
1 tsp salt
1 tsp ground black pepper
1 tbsp ground chili pepper flakes
1 tbsp ground cumin
1 lb ground lean turkey
1 jar (16 oz) chunky salsa, mild or hot
1 cup cooked quinoa (optional) or substitute rice)
1 cup cooked brown rice

Directions
brown meat cook till well done. brown onions with garlic and spices. add to meat, stir in spinach.
blanch lengthwise cut, seeded peppers in boiling water for about 3 minutes..
individually plastic wrap peppers. divide meat mix in 8th, and wrap in plastic pouches. and freeze.
take out individual servings, place 2 halves peppers on plate, divide 1 serving meat mix equally on pepper halves.
microwave about 2 minutes and ready to serve. could sprinkle some shredded cheese, fat free sour cream and avocado on top but will add calories, and carbs
