Introduction

Ingredients

    6 oz bacon or proscuitto chopped
    2 leeks or 1 large onion chopped
    1/2 head cabbage
    8 minced garlic cloves
    2 sliced carrots
    2 sliced potatoes
    2 sliced celery stalks (I omitted)
    1 lb kielbasa sausage
    1 smoked ham hock or 3/4 cup chopped ham
    8 cups water (I used ham broth made earlier)
    1 cup Northern beans
    2 bay leaves
    1 tbsp salt (omitted)
    1 tsp dried thyme
    1 tsp dried oregano
    1 tsp black pepper
    1/4 cup minced parsley to garnish

Tips

This is my go to recipe to make use of a left over ham bone. I throw the ham bone in a crock pot with garlic and a whole onion and water to cover for about 10 hours, or until the remaining meat falls off the bone for the stock. To save time, and dishes, I used canned beans (rinsed) added near the end of an hour simmering the soup. Usually I soak dried beans for my recipes. For a lower fat version, omit the bacon (or use reduced fat), and sauté in water or a small amount of oil, and use extra lean ham and sausage. This is listed as an appetizer, but it is a hearty soup that serves for me as a meal.


Directions

In a large soup pot, saute bacon (5 min), add leeks and cabbage (5-6 min). Add everything else except parsley, and beans if canned and bring to a boil. Partially cover and reduce heat to simmer for 1-1.5 hours. Add the beans in the last 15 minutes if canned. If using soaked beans, they should have been added with everything prior to the boil, and your soup is done when the beans are tender. Remove the ham hock and add the meat to the soup (if using) and bay leaves. Salt and pepper to taste.

Serving Size: Makes 8 1 to 1.5 cup servings (depending on size of chopped veggies)
