IntroductionI saw that imitation crab meat was on sale so I bought a pound then realized I needed something to do with it that didn't involve mayo. I love sushi so this recipe was created. 2 cups cooked white rice (you can substitute brown)
6 oz imitation crab meat or any seafood you choose
1 cup thinly sliced cucumber
1/2 c diced tomato, seeded & peeled
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon sriracha
You can also serve with thin slices of avocado, but this will add additional fat and calories.
I make my white rice by adding 1 cup long grain rice (not instant!) and 2 cups water in a pan. Bring to a boil then simmer covered without stirring or peeking under the lid for 17 min. Remove from heat & fluff with fork. Perfect for this dish! Cut up veggies while rice is cooking, and you can be eating lunch in less than 20 minutes total.
Add dressing ingredients to small Rubbermaid container, close with lid, and shake furiously.
Drizzle with half the dressing then sprinkle with cilantro leaves. Serve immediately.
