Quick Veggie Burgers

Introduction

Much easier than the other recipes my hubby's tried since we gave up meat, and these stick together better, too! This recipe is from "Everyday Happy Herbivore". Number of Servings: 3

Ingredients

    1 can black beans, drained and rinsed
    1/3 cup instant oats
    2 TB ketchup
    1 TB mustard
    * other seasonings as desired *

Directions

Preheat oven to 400 degrees. Prepare baking sheet with nonstick spray or line with parchment paper.

In a mixing bowl, mash beans until mostly pureed, but with still some partial pieces. Stir in condiments and desired spices until well mixed. Add oats until combined.

Divide mixture into 3 or 4 equal parts, then shape into thin patties with your hands. Place on baking sheet and bake for 7-8 minutes, then carefully flip patties and repeat (or until crusty on the outside).

Note: If you don't have instant oats on hand, place rolled oats or old fashioned oats in a food processor or blender to make smaller like instant. Whole oats tend to keep the burgers from sticking together.

*** Also, you can really play with the condiments and spices you mix into the patties. I have added worchestershire, garlic powder, onion powder, Montreal hamburger seasoning, dry mustard, etc. Hubby and I were talking about mixing some roasted garlic & diced green chiles in next time.
