Banana Nut Oatmeal Cookies

Found this recipe on Cooks.com after looking for ways other than banana bread to use up over-ripened bananas. Made it only slightly healthier than the original - but these are darn good. Number of Servings: 24

Ingredients

    3/4 cup white flour
    3/4 cup whole wheat flour
    1 tsp half salt
    1/2 tsp baking soda
    1 tsp cinnamon
    1/4 tsp nutmeg
    1/2 cup Crisco shortening
    1 cup mashed ripe bananas
    1 egg
    1 3/4 cups rolled oats
    1/2 cut chopped walnuts

Directions

Preheat oven to 400 degrees.

Sift together dry ingredients in one bowl, and whip together wet ingredients in another. Add wet ingredients to dry and mix thoroughly.

Drop by spoonful onto lined or greased cookie sheets.

Bake for 12-15 minutes. Bottoms will brown fast.

Cool on a rack. Store in a closed container.

Serving Size: Makes 24 cookies
