Baby Lima bean salad


Number of Servings: 8


    1 lb. dried baby lima beans
    1 med onion
    1 cup green onions
    1/2 cup green peppers
    2 lg stalks celery
    1/2 tsp No Salt
    1 tsp. black pepper
    1 TBS. olive oil
    1 oz. lime juice (to taste)


Cook beans according to directions, set aside.
Cut up veggies into small pieces and place in lage bowl.
Add lime juice, olive oil and spices.
Add beans and gently toss.
Refrigerate 1 hr. and serve
Great on a hot day.

Serving Size: Makes 8- 1 cup servings
