White Bean and Tortellini Soup

Number of Servings: 4

Ingredients

    1 can (15 oz) Great Northern Beans
    4 cups chicken or vegetable broth
    2 cups water
    1/2 cup dry white wine
    Lemon Juice (yield from 2 lemons)
    1/2 t black pepper
    2 cups cheese tortellini
    Feta cheese (optional, not included in nutritional calculation

Directions

Combine first five ingredients in a pot and bring to a boil. Add tortellini; cook for 8 minutes. Stir in beans. Cook over medium high heat 3 minutes or until thoroughly heated. Top with feta cheese if desired.

Yield: 4 servings (2 cups each)
