Elaine's Celery Soup

Introduction

Creamy celery soup, very low in fat Creamy celery soup, very low in fat
Number of Servings: 4

Ingredients

    2 Medium Onions
    2 Medium potatoes
    6 sticks celery
    1 leek
    1 yellow pepper
    1 red pepper
    1 vegetable stock cube
    Mixed herbs
    Salt
    Pepper

Directions

1. Prepare all vegetables as desired, chopped, diced etc...
2. Saute onions and leek
3. Add in as much vegetable stock as desired, the thicker you want the soup the less stock you add
4. Add in rest of vegetables and allow to boil stirring well.
5. Leave to simmer until alll vegetables are fully cooked
6. Blend when ready to desired consistency then serve
